  • 4 pieces chicken breasts
  • 8 ounces mozzarella cheese, sliced
  • 2 medium tomatoes, sliced
  • 1 cup fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Make a pocket in each chicken breast by slicing them horizontally, being careful not to cut all the way through.
  3. Season the chicken with salt and pepper.
  4. Stuff each breast with mozzarella, tomato slices, and basil leaves.
  5. Drizzle olive oil on top of the stuffed chicken.
  6. Place the chicken breasts in a baking dish and cover with foil.
  7. Bake for 20 minutes covered, then remove the foil and bake for an additional 10 minutes until cooked through and the cheese is bubbly.
  8. Drizzle with balsamic glaze before serving if desired.

Notes

Serve alongside a light salad, garlic bread, or quinoa for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at low temperature.
