Preparation
- Preheat your oven to 375°F (190°C).
- Make a pocket in each chicken breast by slicing them horizontally, being careful not to cut all the way through.
- Season the chicken with salt and pepper.
- Stuff each breast with mozzarella, tomato slices, and basil leaves.
- Drizzle olive oil on top of the stuffed chicken.
- Place the chicken breasts in a baking dish and cover with foil.
- Bake for 20 minutes covered, then remove the foil and bake for an additional 10 minutes until cooked through and the cheese is bubbly.
- Drizzle with balsamic glaze before serving if desired.
Notes
Serve alongside a light salad, garlic bread, or quinoa for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at low temperature.
