Preparation
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and prick them several times with a fork.

- While the sweet potatoes are baking, cook the bacon in a skillet over medium heat until crispy.
- Remove the bacon and allow it to drain on paper towels.
- In the same skillet, fry the eggs to your desired doneness.
Assembly
- Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
- Crumble the cooked bacon over each sweet potato, place one fried egg on top of each, and sprinkle with shredded cheese.
- Season with salt and pepper, and garnish with chopped green onions.
