  • 2 large sweet potatoes Preferably orange-fleshed sweet potatoes
  • 4 strips bacon Cook until crispy
  • 4 large eggs Cook to your desired doneness
  • 1 cup shredded cheese Cheddar or your choice
  • to taste Salt and pepper For seasoning
  • to garnish Chopped green onions For presentation

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Bake in the oven for about 45 minutes, or until tender.
Cooking
  1. While the sweet potatoes are baking, cook the bacon in a skillet over medium heat until crispy.
  2. Remove the bacon and allow it to drain on paper towels.
  3. In the same skillet, fry the eggs to your desired doneness.
Assembly
  1. Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
  2. Crumble the cooked bacon over each sweet potato, place one fried egg on top of each, and sprinkle with shredded cheese.
  3. Season with salt and pepper, and garnish with chopped green onions.
  4. Serve warm and enjoy your festive breakfast!

Notes

For added celebration, consider surrounding the potatoes with a simple salad or some fresh fruit. If you have leftovers, store in an airtight container in the refrigerator for up to three days.
