Preparation
- Preheat a cast iron skillet or a heavy-bottomed pan over low to medium heat.
- Crack the eggs into a medium-sized bowl. Whisk them together until the yolks are broken and the mixture is fluffy. Add salt and pepper to taste.
- Melt the butter in the preheated skillet, making sure it coats the bottom.
Cooking
- Pour the whisked eggs into the skillet. Let them spread evenly and cook for about 20-30 seconds.
- Start gently scraping around the edges of the pan with a silicone spatula. This will help create nice curds.
- Continue to slide the spatula through the eggs until they’re fully cooked. This should take about 1-2 minutes.
Serving
- Transfer the scrambled eggs to a bowl and top them with shredded cheddar cheese, fresh salsa, and cubed avocado if you like.
- Serve your Breakfast Burrito Bowl hot and enjoy!
