  • 2-3 large large eggs
  • 1 tablespoon butter for cooking the eggs
  • to taste Salt and pepper
  • 1/4 cup shredded cheddar cheese for topping
  • 3 tablespoons fresh salsa for topping
  • 1/2 avocado cut into chunks, optional

Method
 

Preparation
  1. Preheat a cast iron skillet or a heavy-bottomed pan over low to medium heat.
  2. Crack the eggs into a medium-sized bowl. Whisk them together until the yolks are broken and the mixture is fluffy. Add salt and pepper to taste.
  3. Melt the butter in the preheated skillet, making sure it coats the bottom.
Cooking
  1. Pour the whisked eggs into the skillet. Let them spread evenly and cook for about 20-30 seconds.
  2. Start gently scraping around the edges of the pan with a silicone spatula. This will help create nice curds.
  3. Continue to slide the spatula through the eggs until they’re fully cooked. This should take about 1-2 minutes.
Serving
  1. Transfer the scrambled eggs to a bowl and top them with shredded cheddar cheese, fresh salsa, and cubed avocado if you like.
  2. Serve your Breakfast Burrito Bowl hot and enjoy!

Serve the Breakfast Burrito Bowl warm, straight from the pan. You can also set up a small toppings bar for customization.
