Ingredients
  

Biscuit Dough
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed Make sure the butter is cold for flakier biscuits.
  • 3/4 cup buttermilk
Filling
  • 1 cup cooked sausage, crumbled Feel free to swap for bacon, ham, or a vegetarian alternative.
  • 4 large eggs, scrambled
  • 1 cup shredded cheese (cheddar or your choice) Experiment with different types of cheese.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or set your air fryer according to the manufacturer's instructions.
  2. In a large bowl, mix together the flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk until just combined, being careful not to overmix.
  5. Turn the dough onto a floured surface and knead gently. Roll it out to about 1/2 inch thick.
Assembly
  1. Use a biscuit cutter to cut out circles from the dough.
  2. Place a spoonful of cooked sausage, some scrambled eggs, and a sprinkle of cheese in the center of each circle.
  3. Fold the dough over the filling and seal the edges by pinching them together.
  4. Arrange the bombs on a baking sheet or in the air fryer basket.
Cooking
  1. Bake in the oven for 15-20 minutes or air fry at 320°F (160°C) for about 10-12 minutes, until they are golden brown.
  2. Serve warm and enjoy!

Notes

These biscuit bombs are best enjoyed fresh out of the oven. Can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 2 months.
