Ingredients
  

Blueberry Compote
  • 1 cup fresh blueberries You can use frozen blueberries as well.
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • 1 tablespoon honey (optional) Adjust based on sweetness preference.
  • 1 tablespoon chia seeds (optional) Adds texture and nutrition.
Yogurt Base
  • 2 cups Greek yogurt Use plain or flavored Greek yogurt.
  • 1 teaspoon vanilla extract Omit if using flavored yogurt.
  • 1 tablespoon honey Adjust sweetness to taste.

Preparation
  1. Prepare the Blueberry Compote: In a small saucepan, combine blueberries, lemon juice, and optional honey. Cook over medium heat for about 5–6 minutes until thickened. Remove from heat and stir in chia seeds if using. Let cool.
  2. Make the Yogurt Base: In a medium bowl, whisk together Greek yogurt, vanilla extract, and honey until smooth and creamy.
  3. Assemble the Bites: Spoon about 1 tablespoon of the yogurt mixture into each cavity of a silicone mold. Add ½ teaspoon of the blueberry compote on top and swirl with a toothpick.
  4. Freeze: Place the mold flat in the freezer for at least 2 hours, or until firm.
Serving
  1. Carefully remove the bites from the molds. If difficult to remove, let sit at room temperature for a few minutes. Store in an airtight container in the freezer.
  2. To serve, let them thaw for 2–4 minutes before enjoying.

Notes

Use fresh blueberries for best flavor. Adjust sweetness based on yogurt's tanginess. For added nutrition, top yogurt with granola before freezing. Store in an airtight container for up to a month in the freezer.
