  • 1 whole lemon (zest from whole, juice from half) Zest the entire peel for flavor.
  • 2 cups almond milk, unsweetened (or other plant-based milk) Substitute with your preferred milk.
  • 2 cups blueberries, fresh or frozen Use frozen for a creamier smoothie.
  • 1/2 cup avocado chunks, fresh or frozen Frozen avocados add creaminess.
  • 1/2 cup plain Greek yogurt Provides a rich texture and protein.
  • 1 tsp vanilla extract Enhances flavor.
  • 2 Tbsp chia seeds Adds omega-3 fatty acids.
  • 1/4 tsp cinnamon Optional spice for flavor.
  • as needed optional unflavored or vanilla protein powder or collagen powder To increase protein content.

Method
 

Preparation
  1. Wash and dry the lemon. Use a zester or grater to zest the entire peel.
  2. Cut the lemon in half and juice one half.
  3. Place all ingredients into a high-speed blender, starting with the almond milk.
  4. Blend on high until smooth and creamy. Adjust flavors as needed.
Serving
  1. Serve the smoothie in a tall glass or mason jar. Garnish with whole blueberries or a slice of lemon.

Notes

Store leftovers in an airtight container in the refrigerator for up to 24 hours. Stir well before drinking as it may separate.
