Preparation
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a mixing bowl, combine flour, softened butter, powdered sugar, and vanilla extract. Mix until crumbly, then press into the bottom of the prepared dish to form the crust.
- Bake the crust for 15 minutes until lightly golden.
Filling
- In another bowl, beat the cream cheese and granulated sugar until smooth. Add lemon juice and egg, mixing well.
- Gently fold in the blackberries and pistachios. Pour this mixture over the baked crust.
Baking
- Bake for an additional 25-30 minutes until set.
- Allow to cool before slicing into bars and serving.

For best results, ensure cream cheese is softened properly. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for longer storage.
