Ingredients
  

For the salad
  • 2 pieces chicken breasts Seasoned with salt and pepper
  • 1 cup blackberries Fresh blackberries preferred
  • 2 cups mixed salad greens Can use any preferred greens
  • 1/4 cup fresh basil leaves, chopped Adds flavor to the salad
  • 1/4 cup feta cheese, crumbled Can substitute with goat cheese
  • 1/4 cup walnuts, chopped Optional; can substitute with other nuts
For the dressing
  • 2 tablespoons olive oil Extra virgin olive oil recommended
  • 1 tablespoon balsamic vinegar Make sure it's gluten-free if needed
  • to taste salt and pepper For seasoning

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for about 6-7 minutes per side, or until fully cooked. Let rest before slicing.
Salad Assembly
  1. In a large salad bowl, combine mixed greens, blackberries, basil, feta cheese, and walnuts.
  2. In a small bowl, whisk together olive oil and balsamic vinegar. Drizzle over the salad and toss to combine.
  3. Top the salad with sliced grilled chicken and serve immediately.

Notes

For extra flavor, consider marinating the chicken in balsamic vinegar for an hour before grilling. The salad is best eaten fresh, but can be stored in an airtight container in the refrigerator for 1-2 days.
