Preparation
- Preheat your air fryer to 375°F (190°C).
- In a bowl, mix the cream cheese, cheddar cheese, and diced jalapenos together until well combined.
- Take each chicken breast and slice a pocket into the side.
- Stuff each pocket with the cheese mixture.
- Season the outside of the chicken breasts with salt and pepper.
- Wrap each stuffed chicken breast with 2 slices of bacon, ensuring it’s fully covered.
Cooking
- Place the wrapped chicken in the air fryer basket.
- Air fry for about 25-30 minutes, or until the chicken is cooked through and the bacon is crispy.
Serving
- While the chicken cooks, mix the sour cream and lime juice to make the crema.
- Once done, let the chicken rest for a few minutes before serving with the crema drizzled on top.
Notes
For extra crispiness, consider searing the bacon in a skillet before wrapping it around the chicken. Store leftovers in an airtight container in the fridge for up to 3 days.
