Preparation
- In a large bowl, mix the softened cream cheese, sugar, vanilla extract, and cinnamon until smooth.
- Gently fold in the diced apples.
- Spread the cream cheese mixture evenly over one tortilla and sprinkle it with graham cracker crumbs. Place the second tortilla on top.
Cooking
- Heat a little butter in a skillet over medium heat.
- Once the butter has melted, place the quesadilla in the skillet and cook for 3-4 minutes on each side, or until golden brown.
- Remove from the skillet and slice into wedges.
Notes
Best served hot with a drizzle of honey or maple syrup and a dollop of whipped cream. Leftovers can be stored in an airtight container for up to three days.
