Ingredients
  

Quesadilla Filling
  • 1 cup cream cheese, softened Make sure it's at room temperature
  • 1/2 cup apples, peeled and diced You can substitute with pears, berries, or peaches.
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon Feel free to add nutmeg for extra flavor.
Quesadilla Assembly
  • 2 pieces flour tortillas Whole wheat tortillas can be used for a healthier option.
  • 1/4 cup graham cracker crumbs
  • Butter for frying Use enough to coat the skillet.

Method
 

Preparation
  1. In a large bowl, mix the softened cream cheese, sugar, vanilla extract, and cinnamon until smooth.
  2. Gently fold in the diced apples.
  3. Spread the cream cheese mixture evenly over one tortilla and sprinkle it with graham cracker crumbs. Place the second tortilla on top.
Cooking
  1. Heat a little butter in a skillet over medium heat.
  2. Once the butter has melted, place the quesadilla in the skillet and cook for 3-4 minutes on each side, or until golden brown.
  3. Remove from the skillet and slice into wedges.

Notes

Best served hot with a drizzle of honey or maple syrup and a dollop of whipped cream. Leftovers can be stored in an airtight container for up to three days.
