  • 2 large large onions, thinly sliced (Yellow or sweet onions work best.)
  • 1 cup all-purpose flour (Keeps fritters tender.)
  • 1 cup buttermilk (Adds tang and lightness.)
  • 1 large large egg (For binding.)
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying (Use a neutral oil with a high smoke point.)

Method
 

Preparation
  1. Thinly slice the onions and set them aside.
  2. In a large bowl, combine flour, buttermilk, egg, baking powder, salt, and pepper. Mix until well combined.
Cooking
  1. Fold the sliced onions into the batter until they are fully coated.
  2. Heat oil in a skillet over medium heat.
  3. Once hot, drop spoonfuls of the batter into the oil.
  4. Fry until golden brown on each side, about 3-4 minutes.
  5. Remove the fritters and drain on paper towels.

Notes

Amish Onion Fritters are best served hot, alone or with dipping sauces like ranch or sweet chili. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or toaster oven for best results. For extra flavor, add herbs like chives or parsley to the batter.
