  • 4 pieces Bell peppers Use a mix of different colored peppers for a vibrant presentation.
  • 1.5 cups Cooked rice Can use leftover rice.
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn, canned or frozen
  • 1 can Diced tomatoes Drained if using canned.
  • 1 teaspoon Chili powder Adjust for heat preference.
  • 1 teaspoon Cumin
  • 1/2 teaspoon Salt Adjust to taste.
  • 1/4 teaspoon Pepper Adjust to taste.
  • 1 cup Shredded cheese (optional) Use plant-based cheese for vegan option.
  • 1/4 cup Fresh cilantro, chopped (for garnish)

Method
 

Preparation
  1. Preheat your air fryer to 350°F (175°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine cooked rice, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  4. Stuff the mixture into the prepared bell peppers.
  5. If using, sprinkle shredded cheese on top of the stuffing.
Cooking
  1. Place the stuffed peppers in the air fryer basket and cook for 12-15 minutes, or until the peppers are tender and the cheese is melted.
  2. Garnish with fresh cilantro before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer for a few minutes.
