Preparation
- Preheat your air fryer to 350°F (175°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine cooked rice, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
- Stuff the mixture into the prepared bell peppers.
- If using, sprinkle shredded cheese on top of the stuffing.
Cooking
- Place the stuffed peppers in the air fryer basket and cook for 12-15 minutes, or until the peppers are tender and the cheese is melted.
- Garnish with fresh cilantro before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer for a few minutes.
