Ingredients
  

For the Scotch Eggs
  • 6 large hard-boiled eggs Prepared ahead of time
  • 1 pound ground pork sausage Season well for best flavor
  • 2 large eggs (whisked) For coating
  • 1 cup breadcrumbs Use panko for extra crunch

Method
 

Preparation
  1. Boil the hard-boiled eggs and set aside after peeling.
  2. Divide the raw sausage meat into six evenly sized patties, flatten them, and wrap each around a hard-boiled egg.
Coating
  1. Whisk together two eggs in a shallow dish and place the breadcrumbs in another bowl.
  2. Dip each wrapped egg into the egg mixture, then roll in the breadcrumbs until fully coated.
Cooking
  1. Prepare your air fryer basket with nonstick oil spray or parchment paper.
  2. Place the coated eggs in a single layer in the air fryer basket.
  3. Air fry at 400 degrees F for 15-18 minutes, until golden brown and sausage is cooked.

Notes

Serve warm, sliced in half, or with dipping sauces like mustard or zesty aioli. Store leftovers in an airtight container for 3-4 days. Reheat in the air fryer.
