Preparation
- Boil the hard-boiled eggs and set aside after peeling.
- Divide the raw sausage meat into six evenly sized patties, flatten them, and wrap each around a hard-boiled egg.
Coating
- Whisk together two eggs in a shallow dish and place the breadcrumbs in another bowl.
- Dip each wrapped egg into the egg mixture, then roll in the breadcrumbs until fully coated.
Cooking
- Prepare your air fryer basket with nonstick oil spray or parchment paper.
- Place the coated eggs in a single layer in the air fryer basket.
- Air fry at 400 degrees F for 15-18 minutes, until golden brown and sausage is cooked.
Notes
Serve warm, sliced in half, or with dipping sauces like mustard or zesty aioli. Store leftovers in an airtight container for 3-4 days. Reheat in the air fryer.
