Ingredients
  

Chicken and Marinade
  • 1 lb chicken thighs (cut to 2” pieces) Use boneless, skinless thighs for best results.
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp cayenne pepper Adjust to taste for spice level.
  • ¼ tsp turmeric
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp avocado oil Can substitute with olive oil.
Garlic Herb Butter
  • 6 cloves garlic (minced)
  • 8 tbsp salted butter For a richer flavor.
  • 1 tbsp freshly chopped parsley (plus more for garnish)
  • 1 tbsp honey

Method
 

Preparation
  1. Start by cutting the chicken thighs into 2-inch pieces and placing them in a bowl.
  2. In another small bowl, combine the garlic powder, onion powder, paprika, cayenne pepper, turmeric, kosher salt, and black pepper.
  3. Add the spice mix and avocado oil to the chicken. Mix well and let it marinate for 20 minutes.
Cooking
  1. Thread the marinated chicken pieces onto bamboo skewers.
  2. Line the air fryer basket with parchment paper, arrange the skewers on it, and air fry at 400°F for 10 minutes.
  3. Flip the skewers and cook for another 6-8 minutes until golden and cooked through.
Garlic Herb Butter Preparation
  1. In a small saucepan, melt the butter over medium heat.
  2. Add minced garlic and stir until fragrant.
  3. Mix in honey and parsley.
Serving
  1. Top the skewers with the garlic herb butter and extra parsley before serving.

Notes

For extra flavor, you can marinate the chicken overnight. Soak bamboo skewers in water for about 30 minutes before using to prevent burning. These skewers are best served hot with sides like salad or grilled vegetables.
