Preparation
- In a large mixing bowl, add the sliced chicken and veggies. Drizzle with the olive oil and sprinkle the fajita seasoning. Toss everything together so the chicken and vegetables are well coated.
- Preheat your air fryer to 400°F. Spray the air fryer basket with some olive oil cooking spray.
Cooking
- Place the seasoned chicken and veggies into the air fryer in a single layer. Cook for 10 minutes, shaking and tossing halfway through for even cooking.
- Once done, remove the cooked chicken and veggies from the air fryer. Transfer them to a platter and serve with corn tortillas, avocado, salsa, lime, and cilantro.
Notes
For extra flavor, marinate the chicken strips in the fajita seasoning and oil for 30 minutes before cooking. Feel free to swap in any of your favorite vegetables like zucchini or mushrooms. Always preheat the air fryer for the best cooking results.
